History
Although Alsace is best known for its white wines, many documents relating to inventories abbey cellars and wine of the tithes collected by the Church in the Middle Ages, have reported considerable proportions of red wine. Among the 40 varieties used at that time, Pinot Black figured prominently. Intriguingly a decline in production began at the end of the sixteenth century and only a few localities Alsatian preserved the tradition of red wines (Ottrott, Saint Leonard, Boersch, Saint Hippolyte Rodern, Marlenheim...). So what many consider today as a novelty is actually a legacy of the past who knows a growing success.
Tasting
Alsatian Pinot Black has always been a light, fresh wine with aromas of cherry, raspberry and blackberry and tannins. Yet it is increasingly aged in oak barrels, producing a wine deep and robust, the deep color and aromas reminiscent of ripe fruit and leather...
Food and wine
Pinot Black pink (or red light), dry, delicately fruity and served fresh, is popular around the country buffet and picnic offering charcuterie, grilled meats and salads.
Black Pinot Red, longer maceration, possibly aged in oak barrels, is a full-bodied and balanced, which is enjoying growing success. Red meat and game calling these red Pinot Noirs from Alsace, to the beautiful dark color and intense aromas of cherry.
More generally, Alsace Pinot Noirs go well with white meats and poultry, cheeses, and since red wines of Alsace are not too tannic, why not combine the fish!
It would be a shame to forget certain dishes from the kitchen without borders: tabbouleh, lamb tagine and couscous are some specialties that enjoy being served with him.
We should also mention the desserts too sweet chocolate or red fruit plates who appreciate its flavor!
Ampelography
Leaf: medium, orbicular, dark green, thick, funnel-shaped, slightly bubbled. Ogival teeth averages.
Bunch: Small, cylindrical, compact.
Berry: small, spherical or slightly ovoid, bluish-black or dark purple. Thin film, rich in coloring matter.
In the vineyards
Pinot Black is adapted to temperate zones. He speaks very well on clay-limestone. If one seeks to develop powerful wines, it requires low yields, perfect health, a good maturity and careful winemaking to express its fruit and elegance. The wines are very popular and attractive in their youth, but some have a surprising development potential.
